Blocky white tubers that turn green with exposure. Excellent yield. Milder flavor. Clean skin not prone to ugly blemishes like some white varieties. While white is not the most exciting color for ulluco, it does have one advantage: it is not nearly as disappointing when the tubers turn green in light. In fact, I like the appearance of the greened tubers even better. So, if you will be leaving your ulluco out in the light, you might as well go with a white one. Some people claim that the greened tubers are less earthy. I haven’t been able to tell the difference, but I don’t have a particularly sensitive palate.
