Jerusalem Artichoke, Waldoboro Gold

Waldoboro Gold is variety collected from the wild in Maine.  It has an unusual color for a sunchoke, on the yellow side of tan.

Culinary Traits

This variety tastes like a sunchoke. I don’t find that most varieties differ much in flavor and this has the standard sunchoke flavor. Tubers are yellowish, long, slender, and often irregularly shaped. Because of the unusual shape, this is a variety that is more likely to be used cut into pieces.

Agronomic Traits

Although it has some appealing features, Waldoboro Gold is a wild type sunchoke with long stolons and easily fragmented tubers and it will spread if not contained.  It reaches about 7-8 feet tall here, but it will probably grow taller elsewhere.  Flowers moderately but early and for a long period of time.  It appears to me that flowering is day neutral but tuberization is not.  Sets a good amount of seed with a pollinator, at least as much as Stampede.
