Red-Eyed Bull is a Cultivariable original variety introduced in 2023. It is a large, starchy, baking potato with colored skin and flesh. Red-Eyed Bull is a selection made from open pollinated seed of Tom Wagner’s Azul Toro. I suspect that it was self-pollinated, but it is also quite possible that it was outcrossed.
Culinary Traits
Red-Eyed bull is a starchy potato with moderately thick skin. It has a large average tuber size and makes an excellent baker. Flavor is strong, but not rising to bitterness. The flesh cooks to a uniform light blue.
Agronomic Traits
This is a late variety, best grown to full senescence. Yields are very high, averaging just over six pounds per plant across 2022 and 2023. It has intermediate stolon length. Dormancy is long. This variety is tetraploid and self-fertile, so it will set seed without help, but it will do much better with some additional hand pollination. Tubers tend to become irregular when soil moisture is uneven.

True Seed (TPS)
True seed is open pollinated and I expect that it was overwhelmingly self-pollinated, but I also hand pollinated with bulk pollen. Nearest neighbors in 2023 were Port Fingerling and Muru. I don’t have much experience with this TPS yet, but TPS from the parent provided many large blues and reds and I expect something similar.
