Mashua information and growing instructions
This is a common market variety in Colombia, where mashua is known as cubio. This phenotype appears to be common throughout the Andes, but I don’t know if they are all the same variety or a number of different types that look very similar. This variety is used to make traditional Colombian stews such as cocido boyacense.
I think this is a very attractive variety. The tubers are usually white without any staining and the very dark purple eyes contrast nicely. They are usually very thick at full maturity and can be anywhere from less an inch to a foot long, although most are usually four to six inches. This can be a high yielding variety, although not the equal of the similar heirloom variety Blanca. Bogotá Market has a fairly mild flavor for mashua. It cooks to a purple color, which acts as a handy indicator of when it is ready. This variety is early to emerge in spring and might need to be refrigerated if you will be planting later than April. This is the latest to flower of any of the varieties that we grow.
