Elwha is a 2015 selection from pollinations of a Colombian criolla type potato with bulked pollen from higher dormancy diploid potatoes, mostly of Bolivian origin. It is a diploid potato with a short day photoperiod and minimal dormancy. It begins to sprout again within a few weeks of harvest, so you need to take special measures to store it over the winter. I find that the best method is simply to pack the tubers in a plastic bag and keep them in the crisper of the refrigerator. If you are wondering why you should bother, you are probably browsing the wrong web site. In all seriousness, the tubers are really delicious. The bright yellow flesh melts in your mouth and has an almost carroty flavor. The small tubers cook quickly and require no preparation other than washing. Peeling them would almost be a crime. This is a great potato for roasting whole or halved, drizzled with a little olive oil.
