Yacon ships in spring, usually separate from the rest of your order.

Unfortunately, I lost the pictures of this variety that I took this year, so we’ll have to wait until after the 2021 harvest to fix that.

Wynoochee is 2021 introduction from our yacon breeding project.  It originated from the attempted cross of Bekya and Cajamarca, with the objective to combine the earliness of Bekya with the better flavor of Cajamarca.  I think this goal was achieved.

Wynoochee tubers are medium in size, but numerous, making the plants high yielding.  Tubers begin bulking up early.  Skin and flesh are white.  The tubers are sweet.  Medium to tall.  Compact root balls are easier to harvest than those of long rooted varieties.  Early to flower with a moderate seed set.
